Healthy Holiday Brownies

From the Food For Thought Show with Jen Brewer from The Rochester YMCA 

1 package brownie mix

1 whole egg

1 egg white

1 cup yogurt (vanilla or plain)

1/4 cup water

Mix all ingredients together until smooth.  Pour into pan that has been sprayed and bake according to box directions.  (Take out a few minutes early if you prefer “chewy” rather than “cakey”)

Toppings

Option 1:  1 cup minature marshmallows over top of brownies, put back in oven (with the oven shut off) for a minute or two until they ‘puff’ a little.  Take out of oven and spread the marshmallows over top.  Let sit 5 to 10 minutes to cool then top with Chocolate Frosting

Option 2:  Mix following ingredients til smooth and then spread over cooled brownies.  Wait 5 to 10 minutes for layer to set, then spread chocolate frosting on top.

2 cups powdered sugar

1 Tbsp margarine 

1 tsp vanilla

1 tsp mint extract

2-4 Tbsp milk

Food color is optional

Chocolate Frosting:

2 cups powdered sugar

1/4 cut cocoa powder

1 Tbsp butter or margarine

1 tsp vanilla

3-4 Tbsp milk (depending on the consistency you want.)
